This knife combines the best features of both Western and Japanese blades. With its large, robust blade, it serves as a true workhorse, capable of handling larger vegetables, fruits, or cuts of meat. Designed for chopping and slicing substantial ingredients, it stands out as the flagship of the Discovery Pro series. Steel: Crafted from the finest Japanese VG10 steel, this knife embodies strength and power, thanks to its superior raw material from Takefu Special Steel Co. in Echizen, Japan. VG10 is renowned for its exceptional hardness and durability. Construction: Meticulously handcrafted and polished for ultimate sharpness, the blade is forged with 67 layers, 33 on each side of the core steel. The steel is heated above 1000°C and then cooled below -180°C to achieve a hardness of 60-61 HRC, ensuring lightweight, strength, and incredible sharpness. Handle: The FSC-certified pakka wood handle makes a significant difference, being resistant to heat and distortion. Water-resistant and providing stable control, it consists of compressed wood fibers treated with resin. Ergonomically designed, the handle ensures a comfortable grip. Recommendations: We recommend hand washing this knife to preserve its VG10 Japanese steel integrity. Regularly use a ceramic honing rod to maintain sharpness. Proper storage and periodic oiling of the handle are also advised."
