Satake Shāpu is a patented manual knife sharpener for optimal best results. The knife sharpener grinds/polishes Japanese edges 15°-18°, European edges 20° - 23°. Satake Shāpu features spring-loaded, swivel diamond/ceramic grinding and polishing rods that adapt to the SAF* knife edge for optimal sharpening and honing/polishing. *Self Adjusting Function Diamond-coated sharpening rods for shaping the knife edge on dull knives, as well as ceramic honing rods that maintain, hone / polish the knife edge to an optimally sharp edge. First, take note of the sharpening angle of your knife. Japanese angle is 15° and European style is 20°. Place Satake Shāpu on a stable and level surface. If your knife is very dull, first use the diamond side of the rods to shape/sharpen the knife edge into a new edge. Please note that the diamond side should only be used when sharpness is no longer achieved by honing/polishing with the ceramic rods.
